Prepare the reindeer sirloin:

  1. Sous vide the meat (> 1h / ~55 C):
    • 600 g reindeer sirloin
    • olive oil
    • salt
    • pepper
  2. Fry (~2 min):
    • olive oil
    • butter
    • salt

Or prepare the meat without sous vide:

  1. Fry (~ 8 min):
    • olive oil
    • butter
    • salt
    • pepper
  2. Roast in the oven (~ 5 min / ~ 200 C)

Prepare the carrots in the oven (~ 20 min / ~225 C):

  • 1 carrot
  • olive oil
  • honey apple cider vinegar
  • honey
  • salt
  • pepper

Prepare the mashed potatoes:

  • 6 boiled potatoes
  • 100 g butter
  • 50 ml milk
  • salt

Prepare the cranberry jam:

  • 50 ml cranberries
  • 20 ml sugar
  • salt

Cook the red wine sauce (reduce in half):

  • 150 ml demi glace
  • 100 ml madeira wine
  • 100 ml red wine
