Irish guinness elk stew

Ireland – Guinnes Elk Stew

Make the stew:

  1. Fry the meat first (~ 10 min):
    • 800 g elk
    • 3 carrots
    • 2 celery stocks
    • 1 onion
  2. Add and simmer (~ 2 h)
    • 500 ml Guinness beer
    • 300 ml beef stock
    • 2 bay leaves
    • parsley stocks
  3. Add and slow boil (~ 40 min):
    • 400 g potatoes
    • 300 g carrots
    • 200 g parsnip
    • 1 celery stock
    • 1 onion
    • 50 ml coffee
    • 30 g dark chocolate
    • worcester sauce
    • salt
    • pepper

Serve with:

  • bread
