Make the tonkatsu pork:

  1. Brine the pork (>2 h):
    • 700 g pork loin
    • pickle brine (or similar)
  2. Bread the pork:
    • flour
    • eggwash
    • (panko) breadcrumbs
  3. Deepfry (~ 10 min)

Make the tonkatsu sauce:

  • sesame seeds
  • ginger
  • hoi sin sauce
  • soy sauce
  • worcester sauce
  • ketchup

Serve with:

  • cabbage
  • sriracha
