Lebanese food falafels with baba ganoush, tabouleh, tahini yoghurt, patata harra and feta cheese

Lebanon – Falafel (vegetarian)

3 persons – 6,80 € per persons

Make the falafels:

  1. Mash and mix:
    • 400 g chickpeas
    • 1/2 onion
    • 1 garlic glove
    • 100 g flour
    • cilantro
    • parsley
    • baking powder
    • salt
    • cumin
    • coriander
    • sesame seeds
  2. Shape and deepfry (~ 5 min)

Make the patata harra:

  1. Deep fry
    • 5 cut potatoes
  2. Mix with:
    • 1 garlic glove
    • chili paste

Make the baba ganoush:

  1. Roast (~ 15 min / 250 C):
    • 1 eggplant
  2. Mash and mix:
    • the eggplant
    • 1 garlic
    • tahini
    • olive oil
    • salt

Make the tabouleh:

  1. Cut and drain:
    • 1/2 cucumber
    • 2 tomatoes
    • parsley
    • mint
    • cilantro
    • salt
  2. Make the bulgur (> 20 min):
    • water
    • cucumber and tomato juice
    • salt
    • olive oil
  3. Combine all and add:
    • salt
    • pepper
    • cumin
    • coriander

Make the tahini yoghurt:

  • 1 dl yoghurt
  • 20 ml tahini
  • 1 garlic glove
  • lemon
  • salt

Make the fennel salad:

  • 1 fennel
  • 1 pomegranate
  • 1 orange
  • salt
  • olive oil

Serve with:

  • feta cheese
  • pickled cabbage
