Pakistan – Anday Aloo ka Salan (vegetarian)

Make the curry:

  1. Fry and remove (~ 10 min):
    • 10 boiled eggs
    • 8 boiled potatoes
    • ghee (clarified butter)
  2. Fry (~ 10 min):
    • 3 onions (chopped or made into a paste)
    • 2 bay leaves
    • cinnamon stick
    • black cardamom
  3. Fry (~ 5 min):
    • ginger-garlic paste
    • 2 deseeded tomatoes
  4. Add and simmer (> 10 min):
    • the fried eggs
    • the fried potatoes
    • 50 ml yoghurt
    • garam masala
    • turmeric powder
    • coriander powder
    • chili powder
    • salt
    • water

Cook the rice (~ 15 min):

  • 400 ml basmati rice
  • 800 ml water
  • salt
  • 2 star aniseed

Serve with:

  • roti bread
  • cilantro
