Tunisia – Fricassé

Make the fried bread:

  1. Mix the yeast and let to bubble ( ~ 15 min):
    • 250 ml (warm) water
    • 11 g yeast
    • (a bit of) flour
  2. Add the other ingredients and knead the dough (~ 15 min):
    • 500 ml flour
    • 1 egg
    • oil
    • salt
  3. Form into 3 pieces and let it rise (> 30 min)
  4. Deep fry (~ 10 min)

Serve with:

  • tuna
  • boiled eggs
  • boiled potatoes
  • grilled red pepper
  • tomato
  • cucumber
  • onion
  • parsley
  • (pickled) red cabbage
  • olives
  • harissa
