Venezuela – Arepas

Make the pulled chicken in the oven (~ 3 hrs / ~ 150 C):

  • 1200 g chicken
  • 2 onions
  • 2 oranges
  • 1 lime
  • BBQ sauce
  • chipotle sauce
  • liquid smoke
  • soy sauce
  • vinegar
  • honey
  • bay leaves
  • garlic powder
  • cumin
  • paprika
  • salt
  • pepper

Make the arepas:

  1. Mix the dough and let it rest (~ 5 min):
    • 10 dl precooked cornmeal
    • 10 dl water
    • salt
  2. Form the arepas and fry (~ 10 min):
    • butter
  3. Finish in the oven (~ 15 min / ~ 175 C)

Make the toppings:

  1. Avocado sauce:
    • 2 avocados
    • 2 limes
    • 1 garlic glove
    • mayo
    • cumin
    • salt
    • pepper
  2. Cabbage salad:
    • red cabbage
    • vinegar
    • salt
    • sugar

Serve with:

  • onion
  • cilantro
  • feta cheese
